The term ‘specialty coffee’ is that it was first coined by Erna Knutsen, of Knutsen Coffee Ltd., in a speech to the delegates of an international coffee conference in Montreuil, France, in 1978. In essence, the concept was quite simple: special geographic microclimates produce beans with unique flavor profiles, which she referred to as ‘specialty coffees.’ Underlying this idea of coffee appellations was the fundamental premise that specialty coffee beans would always be well prepared, freshly roasted, and properly brewed.
Coffee, named specialty (there is no label or certification for the specialty coffee) are those showing a superior quality both at the origin (according to the botanical features, farming practices and processing methods) and across further stages of the supply chain (trading, roasting, brewing…). Quality needs to be preserved from crop to cup in order to provide the final consumer with a product which mirrors the commitment of all the actors involved in the chain.
The Specialty Coffee Association of America provides on its website the following definition of Specialty coffee:
The term […] refers to the highest-quality green coffee beans roasted to their greatest flavor potential by true craftspeople and then properly brewed to well-established SCAA developed standards. Specialty coffee in the green bean state can be defined as a coffee that has no defects and has a distinctive character in the cup, with a score of 80 or above when graded according to SCAA Standards
