INTRO TO THE WORLD OF COFFEE

Journey across the coffee belt to discover the different flavors and origins of coffee. Our Intro to Coffee  workshop  is designed to give learners the basics of coffee, both theoretical and practical. This class gives coffee lovers an introduction to coffee (coffee cultivation, market, sustainability issues across the supply chain). Participants  will gets hands-on experience with the daily routine and work of a specialty coffee micro-roastery including introduction to the basics of roasting and brewing.

  • Coffee origins and supply chains
  • Coffee cultivars
  • How the terrorir affects the taste.
  • Methods of coffee production and processing
  • Brewing basics
  • The diversity of coffee according to the different origins and processing methods.
  • Participants will taste three different coffees from three distinct origins.

The goal of NCR coffee classes is to learn how to brew better coffee at home and improve a person’s sensory skills to recognize and appreciate quality. This class is geared to help you become a more aware coffee consumer.
Great for coffee lovers of all levels, but geared towards the casual coffee drinker.

BARISTA
BASICS COURSE

For anyone interested in drinking coffee, having fun and gaining some barista skills, our Barista Basics workshop is the class for you! Students will cover all topics related to operating an espresso machine and making espresso-based drinks, including:

  • Dialing in a grinder
  • Pulling a shot of espresso
  • Steaming milk
  • Pouring latte art
  • Cleaning and maintaining equipment

PRACTICAL INFORMATION

The class will begin with an overview of espresso extraction, exploring the factors and variables that affect flavor. Students will learn the proper technique to dial in espresso and produce a delicious, balanced shot. Once we’ve found that ideal shot, the class will cover the science of steaming milk, discussing how we transform milk into a smooth, velvety latte texture, and how to pour latte art. By the end of the class, you should be able to put all these skills together to make a great cup of coffee.

The Barista Basics course is a 2.5 hour class. All materials are included and students are welcome to take photos and write down notes throughout the class. We also provide a 10% discount on all professional brewing equipment for Barista Basics participants.

ADVANCED BARISTA
COURSE

Take your Barista skills to the next level in our Advanced Barista Course. Together we will explore the science of coffee extraction, the key factors that affect flavor balance in the cup and methods for flavor manipulation. By the end of the class you should have a thorough understanding of:

  • How grind setting and dosage choices impact flavor
  • How Espresso Brew Formula and Brewing Ratios are used for recipe design
  • Understand Extraction Yield and TDS (strength) in relation to espresso
  • How coffee age impacts extraction and techniques for age manipulation
  • Espresso extraction diagnosis

PRACTICAL INFORMATION

By the end of this barista course you will have the analytical tools and practical skills required to make better informed decisions when brewing espresso coffee whether at home or professionally.

EXPLORATION IN ROASTING

Go behind the scenes with our Roastmaster at our micro-roastery at Reffen-Copenhagen Street food.  Participants will learn the basics of the roasting process through a comparative roasting demonstration, examining different profiles of a single coffee to explore the variables that affect flavor. By tasting the coffees side by side, participants get a closer look at how roasting can highlight a coffee’s sweetness and complexity.

The class will include an overview of the cupping process, which is the industry standard method of tasting and evaluating coffee.

Explorations in Roasting is a 2 hour class and and students receive a bag of coffee roasted during the class. No experience necessary

FRANCESCO IMPALLOMENI

Co-Founder / Roastmaster / Trainer

By offering classes we open up some doors for knowledge-sharing and make our customers main players in the coffee story. And we think that’s pretty cool.

Francesco, a native Italian has been a life-long coffee lover. After honing his craft in Italy and Ethiopia, he moved to one of the top coffee-consuming countries in the world to share his passion for craft-roasting.
He co-founded Nordhavn Coffee Roasters with the purpose of making sustainable, fairly-traded specialty coffee more accessible to all coffee lovers.
